Amontillado literally means “in the style of Montilla”. Carlos VII is an Amontillado that has been aging for more than 15 years in our traditional “Solera System” during and after the flor, gaining complexity and full round aromas while retaining the freshness of its origins as a Fino. An harmonious blend of finesse, elegance and age.

Produced from oloroso of approximately 8yrs and then sweetened with a sweet PX, this is a well balanced cream with plenty of complexity.

Produced from the best musts of the Pedro Ximenez grapes, the Fino C.B. is the flagship of Alvear and is omnipresent wherever Andalusians meet. A typical product of that special process which takes place in the cask under a veil of yeast is the “crianza en flor”. C.B. comes from Carlos Billanueva, the cellar master who in the early XIX century marked the casks containing the best wines with his initials.

Alvear Fino en Rama 2016

Unlike other finos in the Alvear range this Fino does not enter the typical "Solera" system and is instead aged by vintage to really show the differences that occur from year to year.
Bottled "en rama" (so unfiltered) this is a powerful expression of a fino. Heady with almond and yeasty aromas it has a rounded mouthfeel and in the mouth is packed with olive saltiness, green apple and a touch of quince. A delicious wine to enjoy with a meal or share over a plate of boquerones.

Alvear Oloroso Asuncion

Aged in the solera system in old American oak barrels this oloroso is bottled with an average age of 25 years.
This is a complex oloroso, dry and nutty with earthy savoury notes (sandalwood, cedar, coffee) combined with the comforting flavours of butterscotch, fig and spice. A great wine to savour and enjoy with a plate of cured cheeses or even pair with rich red meat dishes.

Barquero Los Amigos Fino 75cl

A lead producer of Montilla-Moriles (Cordoba, Andalusia), Perez Barquero was established in 1905 and came under the ownership of the Corodoba, Ruz and Gracia families in 1985. Under their leadership, the wines of Gran Barquero have gained a strong reputation and limited bottlings of ancient Soleras dating back to the foundational period. 

Perez Barquero owns 140 hectares of wineyards in Sierra de Montilla and Moriles Alto, the two major quality areas of Montilla-Moriles, plus a further 70 hectares in the villages of Santaella and Aguilar de la Frontera and Cordoba. Top vineyards are found on elevated areas on white, chalky soils similar to the albarizas from Sherry Country which add distinctive minerality and saline notes to the wines. Grapes for Perez Barquero's most distinctive wines are sourced from their own vineyards; less than a third of their needs are purchased from other growers. 

Old wines from Perez Barquero are scarce to find, with years on the label not referencing vintage, but instead key moments in the history of the winery. When enjoying these wines, look for a logo of a boatman carrying three casks across the Guadalquivir river. Each of the casks represent one of the founding brothers and is meant to evoke the times when the river was navigable all the way to Cordoba.

A well defined Fino charmingly named after the old winery where it is aged for three to four years. With it's clean aromas and dry, light and balanced palate, it is the perfect starting point to discover the world of traditional Andalusian generoso wines. Best served 8-10C.

The Del Pino bodega was founded in 1935 by Manuel del Pino Canete with the intention of producing the finest sweet wines from Pedro Ximenez grapes. The family now maintain 200 hectares of vineyard with the primary aim of investigating new methods of harvesting and producing wines.

Fino is known around the world as THE wine for an apperitif.  2 years under its protective yeast give this wine a fantastic, deep body with a rich floral nose. Dry with notes of toasted almond it is a great accompiment for a mature cheddar of gruyere cheese.

Del Pino PX Clasico

Based in Montalban de Cordoba, this winery is strongly focused on the sweet, generous wines, originally with 30,000 sq meters behind the winery dedicated to the "pasera" (drying out of the PX grapes) which is the key to producing these famous sweet wines. These days the winery boasts 150,000 sq meters of "pasera".

This has lovely caramel notes, with one year spent ageing in tinaja it retains a lightness and freshness. Great paired with cold meats and light desserts.

The Robles family has been dedicated to winemaking in Montilla since 1927. Now in the hands of the third generation, the bodegas has made active breakthroughs to incorporate organic viticulture and work with indigenous yeasts into their traditional methods. At first glance, the vineyards of Bodegas Robles have an air of wildness, with poppies, clover and wild flowers growing alongside the vines. This is all by design, as the family work closely with various national and international research centres to improve their growing methods.

In 2006, Bodegas Robles was awarded Best Organic Company in Spain by the Ministry of the Environment of Spain and Food of Spain Award for Ecological Production 2014 by the Ministry of Agriculture, Food and Environment of Spain.

This style of sherry is aged both under flor as well as without the flor layer, allowing it to oxidize and sweeten, often for more than fifteen years. Full bodied and structured, with a complex, dry and woody taste, it partners well with heavier foods such as mushroom and aged cheeses.
