These premium belly fillets of the bonito, a fish not dissimilar to the tuna, have a deep, velvety texture and buttery, complex flavours; because it is the fattiest part of the fish, it is also the most tender; not to mention the tastiest. These ventresca fillets can be served as an appetizer, either on their own or complimented by a selection of Spanish artisan breads as tapas. Arroyabe has produced artisan fish conserves for over 100 years, from the small fishing town of Bermeo in the province of Biscay, the ventresca de Bonito are cut, filleted, and packed completely by hand.
