One of the oldest Spanish Cheeses, the Afuega'l Pitu is produced in Central Asturias, in the north of Spain. The name is derived from the "bable" in Asturian dialect, meaning 'choking cake', which reflects the cheese's unusual texture. The name is also rumoured to refer to the custom of 'drowning the rooster’ in which a piece of the freshly made cheese is feed to a rooster!
